Spinach soup

Here's a simple and delicious recipe for spinach soup:

Ingredients:

  • Fresh spinach: 4 cups, washed and chopped (or 2 cups frozen spinach)
  • Onion: 1 medium, chopped
  • Garlic: 2 cloves, minced
  • Potato: 1 medium, peeled and diced (for creaminess)
  • Vegetable or chicken broth: 4 cups
  • Olive oil: 2 tablespoons
  • Salt and pepper: to taste
  • Lemon juice: from 1 lemon (optional)
  • Fresh herbs (like parsley or dill): for garnish
  • Cream (optional): for drizzling

Instructions:

  1. Sauté vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for another minute.
